Dark Ale mash-in
The patterns & shapes produced during mash & fermentation never cease to amaze us - this photo was taken this morning immediately after mashing the Dark Ale grist with the hot liquor. To give you a sense of scale, the distance from top to bottom of the picture is around one metre.

Cooper's hammer & driver / Barrel preparation.
Every barrel we use is inspected before filling to make sure they don't leak.
When empty, barrels will lose moisture through evaporation. This causes the staves & heads to shrink, in turn loosening the barrel hoops.
To ensure we have a spirit-tight barrel, we drive the hoops back down towards the bilge of the barrel. This forces the staves tightly together & then tightens the staves against the heads.
Each hoop is driven down with a traditional Cooper's hammer & driver. It is quite a repetitive, labour intensive process, with multiple hits for each hoop, but it is worth it to ensure leak free barrels for all those years of aging!
